  • Oaxaca is the largest producer of mezcal but it is also made in cities like Zacatecas, Durango, Guanajuato, Guerrero, San Luis Potosi and Michoacan.
  • The creation of mezcal is totally handmade, we explain more: Tequila needs 51% agave sugar to be considered tequila; while mezcal needs to have 80% agave sugar.
  • An important difference with tequila is that tequila uses only blue agave, while mezcal is made with different varieties of agave.
  • Depending on the type of aging, mezcal can be: blanco, reposado or añejo.

  • Minero: mezcal minero is the name given to mezcal made in Santa Catarina Minas, Oaxaca. In most of the palenques (mezcal factories) in Santa Catarina Minas, mezcal minero is made in the ancestral way. 
  • Pechuga: In the barrels they put a breast of turkey, chicken or rabbit, to give a smoky flavor.
  • Abocado: Seeds, flowers, maguey worms, fruits and even scorpions are added. The worm or scorpion in some mezcal bottles adds nothing more than visual spectacle.
